Japanese Yasuhiro Fujio was crowned winner of the third edition of S.Pellegrino Young Chef.

With Mentor Luca Fantin – one Michelin star chef of the Bulgari Hotel in Tokyo, Fujio presented his signature dish ‘Across the sea’ to celebrate Japanese heritage. Fujio took also the honor of the Acqua Panna – Taste of Authenticity Award, assigned by the 21 mentors to recognize respect for ingredients and ability to tell his own cultural background.

Among The Grand Jury were chefs: Virgilio Martínez, Margarita Forés, Brett Graham, Annie Féolde, Dominique Crenn, Ana Roš and Paul Pairet. For the first time this year, four out of seven Sages were women, hoping to inspire more female chefs to undertake an exciting career.
