CHANGING TASTES ONE SCOOP AT A TIME

It is believed that the world’s very first ice cream store opened somewhere in Europe at the end of the 17th century. Yet despite the fact that more than 300 years later little has changed, Le Flocon, Lebanon’s first artisanal ice cream shop, is challenging that norm with an unusual spin.

In an interview with the man himself, who is the founder and managing director of Charles Azar Pastry and Bakery Consultancy, he explained that, “The conception of such an idea was an extremely big challenge as a successful ice cream parlors should have the best of both worlds; a solid profitable business model and a happy customer base. To achieve these, I took the time to think about what the best flavors could be that would satisfy, surprise and delight guests? After all, people go to ice cream shops to enjoy savory treats while having a good time. To that end, and after careful study and experimentation, Le Flocon’s menu was created and included a highly bizarre assortment of flavors such as single malt, coconut Malibu, apricot whisky and caramel toffee with other iced desserts served in plates or cups thrown into the mix.” This project, Azar believes, as is the case for all projects he has undertaken, is to grow his consultancy into the industry leader for innovation with a focus on international exposure and consistent results in support of all his clients.
