A GM’s hands-on involvement in the kitchen directly shapes the team culture and significantly elevates the overall culinary experience. By working side by side with executive chef Alessandro Salvatico we foster unity, enhance morale and set exceptionally high standards across all operations. Active involvement in menu development, seasonal ingredient selection and partnerships with local suppliers ensure every dish is innovative, authentic and responsibly sourced. Moreover, open communication and regular feedback between the kitchen and service teams allow us to anticipate guests’ needs and adapt swiftly. This approach not only inspires the team and strengthens collaboration but also creates a dining experience where every detail truly matters. Ultimately, food, service and atmosphere blend harmoniously to make guests feel at home at L’Amo and leave a lasting impression.

We’re always looking to innovate in Dubai’s extremely competitive F&B scene, constantly revisiting our menu according to seasonal ingredients and trends. Additionally, we provide unique wines to elevate the dining experience and create a distinctive atmosphere. Our focus on sustainably sourced ingredients allows us to meet today’s guests expectations and maintain the highest standards of quality. Moreover, this commitment creates memorable visits that encourage guests to return and strengthens their emotional connection with our restaurant experience. Thus, through careful observation of guest preferences, feedback and emerging trends, we ensure every new dish is innovative and thoughtfully crafted.

Do you have any expansion plans for your restaurant?

Yes, we’re delighted to be expanding our homegrown brand L’Amo Bistrò del Mare in Q4 with great anticipation and pride. Singapore felt like a natural next step for us as it’s a city with deep appreciation for gastronomy and culture. We’ll be bringing the timeless culinary heritage of Italy to the city’s heart. Moreover, alfresco dining will be set within the historic grounds of Fort Canning Park at METT Singapore. Importantly, this expansion is about sharing the true spirit of Italian hospitality and creating meaningful and memorable guest experiences every day.
