Elle & Vire Professionnel recently welcomed a group of selected chefs to an exclusive afternoon tea and pastry demonstration at L’École Valrhona Dubai. Held on Monday, November 17th, the event featured renowned pastry chef Gianluca Fusto, owner of FUSTO Milano and ambassador for Elle & Vire Professionnel.

During the session, Fusto showcased his signature precision and ingredient-driven philosophy, guiding chefs through a tasting experience that highlighted creativity, balance and technical mastery. His demonstrations underscored the importance of high-quality dairy and thoughtful sourcing, central pillars of his modern pastry approach.

A chef shaping contemporary pastry

Born in Milan, Gianluca Fusto has built a career defined by exploration, refinement and a deep respect for the raw material. Often described as a contemporary alchemist, he is known for pairing textures, temperatures and minimalist aesthetics to create clean, expressive flavors.

His philosophy has remained constant:
“I start from the product to choose the technique, not the other way around. The ingredient must speak.”

After gaining experience across Italy and in leading kitchens around the world—from the Middle East to China, the United States and Japan—Fusto launched Gianluca Fusto Consulting in 2008, followed by FUSTO Milano in 2020, a creative laboratory dedicated to pastry innovation. His longstanding partnership with Elle & Vire Professionnel reflects a shared commitment to excellence, craftsmanship and education.

Throughout the afternoon, participants discovered a selection of Fusto’s latest creations, along with iconic recipes made with Elle & Vire Professionnel products. The demonstration emphasized:
