Renowned mixologist Vitor Hugo shares his perspective on emerging beverage trends in Dubai and across the UAE, where creativity meets responsibility. From low alcohol by volume (ABV) creations to the artistry of handcrafted ice, he explains how innovation is reshaping hospitality experiences across the region.

What are some of the biggest beverage trends you’re seeing emerge in the UAE?

One of the most exciting trends right now is the growing popularity of low ABV cocktails among modern and health-conscious consumers. Nowadays, people want to enjoy sophisticated flavors while remaining mindful of their wellness. Consequently, mixologists are creating lighter and balanced drinks. Therefore, low ABV cocktails have become a favorite choice for those who want to celebrate responsibly and still have fun.

Why do you think this movement resonates so strongly in Dubai?

Dubai’s hospitality scene continues to evolve rapidly, reflecting a community that values wellness, creativity and refined lifestyle choices across dining and entertainment experiences. Consequently, the low ABV trend perfectly aligns with Dubai’s cosmopolitan mindset, combining pleasure with a conscious approach to drinking. It reflects the city’s desire to promote experiences that are elegant, responsible and deeply enjoyable.

You’ve mentioned creativity in mixology, how does that extend to your ice program?

Ice plays a far more artistic role than people realize. It transforms cocktails into memorable visual and sensory experiences for guests everywhere. In the UAE’s sunny climate, ice serves not just a cooling purpose but also enhances presentation and storytelling in mixology. For example, at Bardali, our bestselling cocktails feature ice shaped like roses or pineapples, adding character and delight to each serve.

Would you say mixology today is about combining art and responsibility?

Certainly, mixology has evolved into a balance of creativity, awareness and storytelling that connects deeply with contemporary consumers in every setting. Every drink should deliver not only flavor but also visual emotion, encouraging guests to savor their experience consciously and joyfully. Thus, innovation in mixology now thrives where artistic presentation meets responsible enjoyment and lasting sensory impact.
