L’École Valrhona Dubai has opened registration for the remaining experiences in its 2026 professional training calendar, bringing internationally acclaimed pastry chefs, chocolatiers and artisans to Dubai for a series of immersive educational experiences. Designed for both aspiring and experienced professionals, the program combines technical expertise, creativity and contemporary industry trends.

Mastering chocolate sculpture with French artisan Paul Klein | 8–12 September 2026

French artisan Paul Klein will share his expertise in chocolate modeling, sculpting and showpiece creation. Participants will learn the techniques behind large-scale chocolate displays and artistic chocolate craftsmanship.

Confectionery finest with French artisan Paul Klein | 8–12 September 2026
Also led by Paul Klein, this masterclass celebrates traditional confectionery. From calissons and filled bonbons to rock candy and classic French sweets, the program offers a comprehensive introduction to confectionery artistry.

Executive pastry chef Brice Konan Ferrand and pastry expert Kirsty Tie present a globally inspired program exploring travel cakes, entremets, snacking concepts and desserts influenced by flavors and cultures from around the world.

Korean take on French eclair with executive pastry chef Brice Konan Ferrand and pastry expert Kirsty Tie | 3–5 November 2026
South Korean pastry chef Eunyoung, founder of Garuharu, will share her distinctive approach to French pastry. The course includes eclairs, choux creations, travel cakes and tarts that combine Korean creativity with classic French techniques.

Exploring Ikebana through sugar art with master sugar artist Stéphane Klein | 9–13 November 2026
Led by Stéphane Klein, this specialized workshop focuses on pulled sugar, blown sugar, assembly techniques and the creation of elegant sugar showpieces inspired by the Japanese art of Ikebana.

Italian twist on travel cakes with renowned Italian pastry chef Gianluca Fusto | 10–11 November 2026
Renowned Italian pastry chef Gianluca Fusto concludes the program with a class dedicated to modern pastry techniques, plated desserts and contemporary interpretations of travel cakes inspired by Italian flavors and ingredients.
