16 years after launching in Lebanon, Couqley has evolved from a neighborhood French bistro into a leading regional dining concept. In this exclusive interview, the founders, chef Alexis Couquelet, Patrick Cochrane and Ali Daoud discuss the vision, milestones and operational philosophy behind the brand’s lasting success across Lebanon and Dubai.
Alexis Couquelet and Patrick Cochrane: 16 years after launching Couqley, how did your shared vision initially shape the brand?
From the beginning, as a chef, I recognized Lebanon lacked authentic French bistro experiences despite strong cultural ties connecting the country and France. At the same time, Patrick Cochrane shared my ambitions surrounding traditional French hospitality, strengthening Couqley’s operational foundations across regional markets. We both envisioned warm hospitality, classic comfort food and carefully selected wines creating memorable dining experiences for guests. We originally named the restaurant “Couquelet,” a spinoff of my last name creating personal connections between family heritage and culinary philosophy. Operational management, culinary direction, finance and marketing expertise combined to establish balanced foundations. In turn, these supported our successful long-term regional expansion.
Alexis Couquelet: How did you preserve Couqley’s authentic French identity while successfully expanding the brand across Lebanon and Dubai?
From the outset, we maintained authenticity by prioritizing disciplined execution while consistently delivering refined French dining experiences across the region. At its core, French cuisine is defined by precision, simplicity and discipline. Rather than chasing temporary hospitality trends, we prioritized recognizable dining experiences. Throughout the years, I supervised culinary operations continuously while ensuring consistency across both front-of-house and kitchen environments. Earlier in my career, I worked alongside Jean-Georges Vongerichten and Alain Ducasse. This helped me strengthen Couqley’s culinary philosophy. Furthermore, my hands-on leadership encouraged ongoing learning opportunities while preserving operational standards throughout Lebanon and Dubai.

Establishing Couqley within Lebanon’s competitive dining market created loyal clientele while significantly strengthening long-term regional hospitality brand recognition. Over time, it became a neighborhood dining destination attracting recurring business lunches, casual dinners and weekly social gatherings among loyal guests. Later, a successful expansion into Dubai demonstrated its ability to maintain operational consistency while competing positively with international hospitality brands.
Ali Daoud and Alexis Couquelet: What continues to keep Couqley relevant within today’s highly competitive international hospitality landscape?
Throughout the years, the restaurant has maintained relevance by protecting brand identity while delivering recognizable hospitality experiences across Lebanon and Dubai. As a result, strong guest relationships have helped to create lasting loyalty. Meanwhile, disciplined operational execution has prevented unnecessary adaptation to temporary hospitality trends. Furthermore, growing demand for French dining has reinforced our established hospitality positioning. Beyond hospitality trends, Couqley has created memorable experiences for longstanding guests while strengthening emotional connections extending beyond traditional dining relationships.
Ali Daoud and Patrick Cochrane: How has Couqley maintained dependable standards through economic challenges and beyond?
Throughout Lebanon’s economic challenges, Couqley continuously adapted while maintaining dependable hospitality standards, operational discipline and consistent guest experiences. More recently, operational challenges throughout the UAE further strengthened its resilience, while reinforcing the importance of flexibility, consistency and strong internal culture. During uncertain periods, guests increasingly sought dependable hospitality environments, thereby strengthening its reputation among loyal dining audiences across Lebanon, Dbayeh and Gemmeyze and Dubai, Pullman Downtown. Over time, maintaining quality, preserving a clearly defined identity and delivering comforting hospitality experiences have helped establish Couqley among the region’s leading French dining concepts.
Ali Daoud: How does Couqley balance regional expansion with protecting the brand’s original identity and operational standards?
In my opinion, growth should remain focused primarily on operational control rather than aggressive expansion throughout hospitality markets. At every location, the concept approached new openings carefully while ensuring culinary consistency, guest satisfaction and recognizable hospitality experiences. To protect brand integrity, it relied upon disciplined training, high standards and supervised hospitality execution. Equally important, hospitality teams transferred proprietary recipes, culinary techniques and operational knowledge carefully while preserving consistent guest experiences. Couqley remained selective about expansion opportunities that risked weakening its longstanding brand credibility.
